Finish off your Asian feast with a traditional dessert, the crispy coating gives way to tender hot banana inside. Unbelievably easy, and only 4 ingredients. However, this isn’t a pudding to be eating every day, due to the high fat content, but definitely worth trying it for a treat.

- 2 large bananas
- 60 g gluten -free self raising flour
- 60 g dessicated coconut
- 4 tbsp vegetable oil or coconut oil
- 1 tsp caster sugar to serve (optional)

Instructions
- Peel the bananas, half length way, and then split in half again width way, to make quarters.
- Prepare the batter by mixing the flour and coconut together in a shallow dish with just enough cold water to make a thick batter.
- Coat the banana pieces in the batter.
- Heat the oil in a wok or heavy-based pan until very hot, and then carefully add in the bananas. BE VERY CAREFUL, THIS CAN SPIT HOT OIL.
- After a minute or so, it will turn golden-brown on the bottom. Carefully turn over and fry the other side. Serve immediately with a small sprinkling of sugar.
