Succulent morsels of beef and butternut squash in a warming coconut sauce. I am sure that my Malaysian sister-in-law will be having serious ‘words’ with me about this, and as much I love the deeply-spiced authentic rendang, I have adapted the original to make this version family-friendly. Feel free to add dried chilies to taste, but remember, long, slow cooking intensifies flavours, so adjust as necessary!

Ingredients
- 1 tsp coconut oil
- 1 medium red onion
- 1 clove garlic crushed
- 2 cm fresh ginger about the size of your thumb, grated
- 1/2 tsp ground turmeric
- 2 pinches ground cinammon
- 400 g braising steak diced
- 200 ml coconut milk
- 100 ml water
- 250 g butternut squash peeled weight
- salt and pepper to taste
- 1/2 lime juice only
- 5 g fresh coriander for garnish, optional

Instructions
- Chop the onion finely. Heat the oil in a heavy-based pan (ideally with a lid) add the onion and cook over a medium heat for 5 minutes or so until softened.
- Add the garlic, ginger, turmeric and cinnamon and stir. Tip in the steak and mix everything together.
- Add the coconut milk and water, and bring to a slow simmer. At this stage, you can either continue to cook it on the hob, covered over a low heat, or transfer to a casserole dish and bake, covered the oven at 160C fan/180C or GM5. Cook gently for 45 minutes.
- Meanwhile, prepare the butternut squash into 2 cm cubes. After the 45 minutes, add the squash and lime juice into the casserole, and continue to cook for a further 30 minutes, until tender.
- Serve hot, with rice and a green vegetable such as sugar snap peas or pak choi.
