Peel the bananas, half length way, and then split in half again width way, to make quarters.
Prepare the batter by mixing the flour and coconut together in a shallow dish with just enough cold water to make a thick batter.
Coat the banana pieces in the batter.
Heat the oil in a wok or heavy-based pan until very hot, and then carefully add in the bananas. BE VERY CAREFUL, THIS CAN SPIT HOT OIL.
After a minute or so, it will turn golden-brown on the bottom. Carefully turn over and fry the other side. Serve immediately with a small sprinkling of sugar.
