This flat-bread is slightly sweet, like a brioche and light as a feather – together with tender pan-fried steak and red onions,this is a match made in heaven.  Following diagnosis of a gluten allergy or intolerance, many of my gluten-free friends and colleagues find that they really miss a good bread.  I am so happy to have developed this for you to enjoy.  No yeast, no eggs, no dairy, and ready in less than 15 minutes.  I hope you’ll love this as much as I do.

Instructions
  1. Begin by peeling and slicing the onion. Heat 1 teaspoon of the olive oil in a heavy-based pan over a medium heat, and cook the onion for 8-10 minutes, stirring occasionally. Add a teaspoon of water if required to stop it burning.
  2. Meanwhile, mix your flatbread batter by mixing the flour, milk and ground flax seed together in a bowl, to form a firm batter.
  3. Heat another frying pan with the other teaspoon of olive oil over a medium heat, making sure the bottom of the pan has a thin covering of oil.
  4. Take half the mixture (if serving for 2) and spread it into a circle, about 12 cm in diameter. Cover with a lid or foil for a few minutes until golden on the bottom and the top is no longer liquid.
  5. Carefully turn it over and brown the other side, with the lid off. When it is cooked, remove from the pan and keep warm in a clean, dry tea towel. Repeat with the other half of the mixture and again, keep warm.
  6. Fry the steak along with the onions, according to your liking. Remove from the pan and slice thinly.
  7. To serve, place a flatbread on the plate (golden-side down), top with onions and steak. Serve with red onion chutney if desired.
