Crispy beef is one of our most popular Chinese takeaway dishes, and here it is, re-created without the wheat and soya, from ingredients you can find in any supermarket. I like a challenge, so I wanted to recreate this recipe for you to prepare without any specialist ingredients. Once you have chopped your ingredients, it will be on the table in just a few minutes.

Ingredients
- 2 tbsp cornflour
- salt and pepper
- 2 medium beef steaks frying steak or sirloin steak
- 2 tbsp vegetable oil
- 1 clove garlic
- 2 spring onions trimmed
- 1 tsp fresh ginger finely chopped
- 1 medium carrot peeled
- 1/4 cube beef stock
- 1/2 tsp black treacle or molasses
- 1 tsp rice wine or cider vinegar

Instructions
- Slice the steaks thinly and toss in the cornflour. Season with salt and pepper.
- Chop the garlic and ginger, and thinly slice the spring onions and carrot, into very thin batons.
- Crumble the 1/4 stock cube in 2 tablespoons of boiling water, and mix with the black treacle/molasses.
- Heat the oil in a wok or heavy-based pan until very hot, and stir-fry the beef, until crispy on the outside. Remove, and drain on a kitchen towel, then place into a serving dish.
- Meanwhile, stir-fry the garlic, ginger, spring onions for 2-3 minutes, until soft. Add in the stock/treacle mixture, and the rice wine. Stir well and pour over the crispy beef and mix well.
- Serve with boiled rice or rice noodles.
