With a restrictive diet, I find that puddings can be quite a challenge. This is a fairly standard chia seed pudding. I find blitzing removes the slightly gloopy consistency that can be off-putting – certainly to younger members of the family.

- 1 tbsp chia seeds
- 2 tsp cocoa powder
- 125 ml coconut milk tinned, not from a carton
- 1 tbsp maple syrup or honey
- 1 tsp chopped chocolate optional, to serve
- 1/2 banana

Instructions
- Blitz all the ingredients except for the chocolate and banana in a blender until smooth and leave to set for a minimum of 30 minutes in the fridge until set.
- Top with the chopped chocolate and banana, and serve.
