Immune-boosting, low fat, low carb and ready in 15 minutes – can fast food get any better? The weather was so beautiful today that I couldn’t help thinking of summer barbecues, and just had to make one of our favourite burgers. Whilst I didn’t get around the cooking this on on the BBQ, I did eat it outside, surrounded by the first daffodils of Spring. The perfect accompaniment would be crunchy-coated sweet potato fries or tortilla chips and a large green salad.

Ingredients
- 500 g turkey mince
- 1/2 tsp sumac
- 1/2 tsp dried oregano
- salt and pepper to season
- 4 spring onions
- 4 portobello or field mushrooms
- 10 g baby spinach optional, to serve
- 8 slices cucumber optional, to serve
- 4 slices beetroot optional, to serve
- 1 tsp vegetable oil
- 4 mini wooden skewers optional, to serve

Instructions
- Heat the grill to medium hot. Clean the mushrooms with a damp piece of kitchen roll, and then brush lightly with the vegetable oil.
- Place the mushrooms under the grill, cook for 5 minutes, turning once. Keep warm.
- While your mushrooms are cooking, mix together the turkey mince, oregano, sumac, salt and pepper. Shape into 8 thin patties, about 7cm diameter. Cook under the grill for 8-10 minutes, turning once. Check that the juices run clear when cooked.
- To assemble, place the a cooked mushroom on each place, top with a few baby spinach leaves. Add on the first burger, top with 2 slices of cucumber, then the second burger and finally the slice of beetroot. Secure with a wooden skewer.
