We were lucky enough to visit Portugal in late Spring, and one of the allergy-free options that we were offered in almost every restaurant and café was their fresh, homemade soup.  Thickened with potato, and never containing dairy, we had loads of delicious variations.  We ordered ‘green soup’ at a simple beach café recommended by a local – and it was so good we ordered seconds! This is my version, I hope you like it.

Instructions
  1. Heat the oil in a large saucepan and add the leeks and potato. Cook gently over a low heat whilst you chop the other vegetables. Stir often to stop them sticking to the bottom.
  2. Add the garlic, courgette and stock. Simmer for 10-15 minutes until all the vegetables are tender.
  3. Stir through the spinach until wilted and then blend with a stick blender. Season, and serve with a drizzle of olive oil and a sprinkle of dried chilli or sumac.

Can be chilled, or frozen and reheated.
