Comforting, warming, the perfect soup for a those days when you need the food equivalent of a cosy blanket. It’s also great for when you are feeling a little under-the-weather; with ginger and garlic to help fight those seasonal bugs. Many traditional cultures use ginger to settle the stomach, and garlic has well-known antibacterial properties.
Many recipes use tinned creamed corn in this recipe, but I prefer to use unprocessed ingredients wherever possible, and frozen vegetables retain their vitamins as it is harvested and frozen quickly. Make sure you use the most powerful blender/food processor you have, to result in a lovely smooth soup.

Ingredients
- 2 chicken breast
- 2 cloves garlic
- 2 cm fresh ginger
- 1 litre boiled water
- 400 g sweet corn frozen, fresh or tinned
- 1 cube chicken stock
- 2 tbsp rice wine or sherry
- 1 spring onion sliced - for garnish, optional

Instructions
- Peel and slice the garlic and ginger. Place in a large saucepan with the chicken breasts (keep them whole) and hot water.
- Cover and bring to a simmer for 10-15 minutes, depending on their size. The chicken is cooked when it is white all the way through. Remove the chicken from the saucepan, (keep the cooking water), and place on a chopping board to cool slightly.
- Add half (200g) of the sweetcorn and the stock cube to the saucepan. Blend thoroughly with a stick blender, or food processor. Return to the pan and bring back to the boil.
- Shred the chicken with 2 forks, return to the saucepan and add in the rice wine and remaining 200g of sweetcorn. Heat until the soup has bubbled through for 2-3 minutes.
- Serve garnished with the sliced spring onion.
