Ingredients

  1. Mix together the chia seeds, oats, apple juice and coconut cream. Refrigerate for at least an hour, or up to 3 days.

  2. Blend the tropical fruits with any kind of blender until smooth.

  3. To serve – you may need to add a few more tablespoons of water or apple juice to the chia mix loosen it up, depending how far in advance you prepared it.

  4. Divide between 2, top with the blended tropical fruit and coconut flakes. If you like it sweeter, drizzle a little honey over the top.

COOK ONCE: EAT TWICE

This lasts for up to 3 days in the fridge, so double-up the chia base, then you can top with any fruit you like.
