These are made with just 1 ingredient – fresh salmon. No breadcrumbs, no eggs – and they stayed together perfectly proving that you sometimes the simplest things work best.
You will see that I served these on a bed of Greek-style butter beans, but how you serve them is entirely up to you – they work really well with chips too!
Some top tips. Don’t rush these. Cooking them slowly over a low heat and keeping your pan covered ensures a beautifully soft and succulent burger.
If you fancy trying one of the herbed varieties below, I learnt from my lovely friend Alison to chop and freeze any leftover herbs so there is no waste, and now I always have a ready supply of herbs for another recipe.

- 400 g salmon fillet uncooked, skin and bones removed
- 1 tsp oil coconut, olive or any vegetable oil

- Check for any remaining skin or bones, remove and then chop the salmon into chunks.
- Tip the salmon (plus any optional herbs) into a food processor and blend until completely smooth and combined. This may take 3-5 minutes depending on your food processor - you don't want to see any chunks.
- Heat the coconut oil in a non-stick saucepan over a low heat.
- Using your hands, or a pastry cutter, form the salmon mix into small patties about 6 cm across and 1 cm deep.
- Add to the pan, cover either with a lid or some foil and cook until you can see the edges turning a light pink and the base is lightly browned.
- Turn over, keep the pan uncovered and cook for another 2-3 minutes. Serve immediately, or cool and refrigerate to serve cold.

Make double, chill and serve the leftover portion for lunch the following day. Absolutely delicious served with a spinach and rocket-style salad and cold baby new potatoes.
variations and serving suggestions
Asian – add in a tablespoon of chopped coriander and squeeze over some lime. Serve with rice flavoured with desiccated coconut and coriander.
Dill – add in a tablespoon of fresh dill. Really nice with new potatoes crushed with garlic and olive oil.
Parsley – add in a tablespoon of fresh parsley and squeeze over some lemon. Try these with sweet potato chips.
