A brilliant alternative to flour wraps, perfect for packed lunches and full of goodness.  Ready in a a couple of  minutes, these will be a big hit with everyone in the family.  Make with my tahini-free hummus recipe if you are allergic to sesame.

Instructions
  1. Grate the carrot and mix it with the hummus.
  2. Take a lettuce leaf and lay it flat. Top with a slice of chicken.
  3. Spread a quarter of the carrot and hummus mixture on top of the chicken.
  4. Tuck in the sides of the lettuce leaf and roll up into a wrap. Leave whole, cut in half, or into small 'pinwheel' shapes as shown in the photo.
