  1. Soak your wooden kebab sticks in water in the sink or a bowl.

  2. Tip all the ingredients into a bowl and combine thoroughly with your hands – this is great for getting the kids involved – ensure they wash hands carefully before and afterwards! If you can, leave for an hour or more covered, in the fridge. This can be prepared the night before.

  3. Divide the mixture into 8, and shape around the wooden kebab sticks in roughly sausage shapes.

  4. Heat a griddle pan, or a large frying pan, or a grill to a medium-hot setting. Lightly brush each kofta with oil and either griddle, fry or grill – turning often – until browned on the outside, and cooked through. This will take 8-12 minutes depending on the heat setting.

  5. Serve hot or cold.
