Succulent morsels of beef and butternut squash in a warming coconut sauce.  I am sure that my Malaysian sister-in-law will be having serious ‘words’ with me about this, and as much I love the deeply-spiced authentic rendang, I have adapted the original to make this version family-friendly.  Feel free to add dried chilies to taste, but remember, long, slow cooking intensifies flavours, so adjust as necessary!

Instructions
  1. Chop the onion finely. Heat the oil in a heavy-based pan (ideally with a lid) add the onion and cook over a medium heat for 5 minutes or so until softened.
  2. Add the garlic, ginger, turmeric and cinnamon and stir. Tip in the steak and mix everything together.
  3. Add the coconut milk and water, and bring to a slow simmer. At this stage, you can either continue to cook it on the hob, covered over a low heat, or transfer to a casserole dish and bake, covered the oven at 160C fan/180C or GM5. Cook gently for 45 minutes.
  4. Meanwhile, prepare the butternut squash into 2 cm cubes. After the 45 minutes, add the squash and lime juice into the casserole, and continue to cook for a further 30 minutes, until tender.
  5. Serve hot, with rice and a green vegetable such as sugar snap peas or pak choi.
